Pumpkin Pecan Muffins

Ingredients
  • 2 ½ cups almond flour
  • ¾ teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • ½ cup pumpkin puree
  • 3 tablespoons honey
  • 2 tablespoons natural maple syrup
  • 4 tablespoons melted organic butter or ghee
  • 1 teaspoon vanilla
  • 2 eggs
  • ½ cup chopped pecans or nut of choice
  • ½ cup raisins
Instructions
  1. Preheat oven to 325F.
  2. Line a muffin pan with paper liners.
  3. In a large bowl, mix together dry ingredients (except nuts and raisins).
  4. In a medium bowl mix wet ingredients together. Sift dry ingredients into wet a little at a time and fold together.
  5. Fold in pecans and raisins.
  6. Spoon batter into muffin tray.
  7. Bake for 25-30 minutes, until golden brown.

I worked on this recipe to perfect it because my little girl loves muffins. Since she is a picky eater I wanted to make sure they taste good AND are good for her heath. Here is the end result!     I’d like to cancel my membership. This plan will not work for me. I am a 79 year old disabled woman
    who wants to lose weight to heal my body. However, I cannot use your exercise program since I’m
    going to rehab and they are designing exercises for me. I would love a book of your receipes, however
    that’s all I really wanted.
    I think this program is not what I need and I want to cancel and receive a refund for any monies
    expended.
