Twisted Walnut Salmon Rounds

Celebrate the holidays with your friends in a healthiest way possible; Great food and lots of laughs!
Ingredients
  • 2 lb salmon fillet, skinned and bones removed
  • 8 cups spinach, chopped
  • 1 cup walnuts, crushed
  • 2 cups brown rice, cooked
  • ½ cup aged cheddar cheese, shredded
  • ½ cup onion, minced
  • 2 garlic cloves, minced (see tips)
  • 4 tsp extra virgin olive oil
  • 4 tsp lemon zest
  • salt and pepper to taste (see tips)
Instructions
  1. Lightly grease skillet or use a non-toxic, non-stick pan
  2. Add in onion and cook until translucent
  3. Add in garlic, spinach, salt and pepper to cook until spinach starts to wilt
  4. Remove from heat
  5. Add cooked rice & zest of lemon
  6. Use the back of a spoon to spread the spinach mixture onto the salmon
  7. Sprinkle Nuts on top
  8. Sprinkle Cheese
  9. Roll up salmon & secure with toothpicks
  10. Cook at 375 degrees for 15 - 20 mins
  11. Let cool & slice into think portions
Notes
Tips:
1. I encourage having locally grown, organic food but I know many cannot afford that. The reason I say to have organic garlic is because it is much more potent!

    I didn’t realize that there is such a difference between organic garlic and the conventional one! I’m going to have to try this recipe without the cheese (since dairy gives me breakouts) since I love rice and salmon so much!

    I was wondering what everyone thought about organic coconut sugar?? Anyone have any input?
