Ingredients
  1. 1¼ cup plain greek yogurt
  2. 1 egg
  3. 1 cup apricot jam
  4. 2 cups brown rice flour
  5. 1 tsp ground cinnamon
  6. 1 tsp ground allspice
  7. 1 tsp ground nutmeg
  8. 1¼ tsp baking soda
  9. 1 cup apricots (dried and chopped)
  10. 1 cup currants
Instructions
  1. Preheat oven at 350 degrees F.
  2. Grease bread loaf pan.
  3. Mix yogurt, egg and jam in a bowl.
  4. Add dry ingredients slowly.
  5. Mix in apricots and currents.
  6. Pour into pan and bake for 45 mins.
  7. Let cool before eating.

    Your apricot bread loaf looks delicious! I see that you are using brown rice flour in this recipe. What other flours would you recommend to use when baking?

      Hi Grayson,
      Oat flour and almond flour are both great options, easy to make at home as well. When choosing pretty much any product to eat/cook with you want the least amount of ingredients in it, meaning as natural as possible 🙂

    Off topic question.. Was wondering if Flavia could tell me at what age baby Milia started having goats milk? My 7month old baby girl is weaning off my breastmilk as I fell pregnant again.
    in my country (uk) , they advice not to give babies any milk other than formula for the first year of life.
    But I’m a bit reluctant to put her on formula after seeing the long list of ingredients…

      Hi Bettina,
      I consulted Flavia, she said “Go to mtcapra.com and read all about it. I ran out of milk at 10 months but there are stories of newborns on the formula I made.”
