Low Calorie Vinaigrette Recipe

Serves: 1 cup
Throw out store bought salad dressings filled with preservatives and make your very own. Store in refrigerator for 5 days covered. Bring to room temperature before serving.
  • 1 large garlic clove
  • ½ tsp sea salt
  • 5 tbsp extra-virgin olive oil
  • ¼ cup white-wine vinegar or red-wine vinegar
  • 7 tbsp fresh orange juice
  • 1 tbsp Dijon mustard
  1. Mash garlic clove with fork and mix with sea salt to make a paste.
  2. Whisk in olive oil
  3. Add in mustard, juice and vinegar
  4. Whisk ingredients together until well blended
  5. Taste and adjust flavour with sea salt and juice
If whisking to keep from solidifying in refrigerator, whisk mustard while very slowly adding in oil. Whisk constantly and fast until well blended.

    It says low calorie vinaigrette but it contain 5 tbsp of olive oil. 1 tbsp of olive oil has around 140 calories so 5 tbsp means a lot of grams of fat, good fat but still fat. Even you do not eat all one time still a lot of oil in this recipe.

    For those of you wondering what’s in the salad, it looks to me like a “real” greek salad. Cucumbers, red onion, olives, tomatoes and feta. My boyfriend is Greek and we went to Greece last summer for 11 days. I ate like a fiend and did NO EXERCISE (sadly) for the entire vaca. Just lay on the beach every day and I lost 3 pounds! The Mediterranean diet of lots of fruits and veggies and not eating processed food really makes a difference. Of course I put it back on once I got home but that made me realize how bad the American diet is so I’ve made lots of changes and I have so much more energy and look and feel so much better!
