Pasta Sesame Salad
- 1 cup brown rice pasta (elbow, penne...etc.)
- 2 cups cooked white beans
- 1 cup thinly sliced celery
- 1 medium chopped carrot
- 1 medium slivered carrot
- 3 tbsp coconut oil
- 2 tbsp toasted sesame oil
- 3 tbsp seasoned rice vinegar
- 2 tbsp chopped ginger
- 1 garlic clove
- ¼ cup water
- Toasted sesame seeds
- Pinch of salt
- Pinch of pepper
- Cook pasta and set aside in bowl to cool.
- Blender chopped carrot, coconut oil, sesame oil, rice vinegar, ginger, garlic, water. Blend the mixture until smooth. Set aside.
- Toss pasta in dressing, adding in salt and pepper.
- Add shredded carrot, celery, and cooked white beans to the salad and sprinkle with toasted sesame seeds.
