Chicken Marinade

- 2 chicken breasts, chopped
- ½ tsp saffron
- 4 lemons juiced
- 4 tbsp evoo (extra virgin olive oil)
- 1 bell pepper, chopped
- 1 onion, finely chopped
- 4 tbsp parsley, finely chopped
- sea salt and pepper
- Boil a half cup of water and add it to saffron
- When cool, add oil, lemon juice, salt and pepper to saffron water.
- Combine chicken, onion, pepper and parsley together.
- In a plastic bag add the chicken and marinade and shake. Place in refrigerator for at least one hour.
- BBQ on skewers, pan fry or bake along with your favorite side dish or on top of a salad.
