Chicken Marinade

This is a middle eastern recipe that is very tasty and healthy! Enjoy.
Ingredients
  • 2 chicken breasts, chopped
  • ½ tsp saffron
  • 4 lemons juiced
  • 4 tbsp evoo (extra virgin olive oil)
  • 1 bell pepper, chopped
  • 1 onion, finely chopped
  • 4 tbsp parsley, finely chopped
  • sea salt and pepper
Instructions
  1. Boil a half cup of water and add it to saffron
  2. When cool, add oil, lemon juice, salt and pepper to saffron water.
  3. Combine chicken, onion, pepper and parsley together.
  4. In a plastic bag add the chicken and marinade and shake. Place in refrigerator for at least one hour.
  5. BBQ on skewers, pan fry or bake along with your favorite side dish or on top of a salad.
