Double Chocolate Cupcakes

Ingredients
  • ½ cup coconut flour
  • ½ cup powdered cacao
  • ½ teaspoon baking soda
  • ½ teaspoon ground Aztec salt
  • 8 eggs (room temperature)
  • ½ cup coconut oil (melted)
  • ⅔ cup honey or agave
  • ¼ cup dark chocolate chunks
Instructions
  1. Pre-heat oven to 350F
  2. Line muffin pan with cupcake liners
  3. Mix dry ingredients together in a food processor
  4. Slowly add wet ingredients into processor
  5. Fold in chocolate chunks
  6. Use a small ice cream scoop to separate into cupcake liners. Fill about ¾ full
  7. Bake for 17 - 20 minutes
Notes
You can replace the coconut oil with organic melted butter if you prefer the butter taste. Another option is to use ghee.

If you leave them in for a little less time than recommended they come out a little gooey in the centre which is actually very delicious, but that depends on your preference!
