Sesame-Cran Pumpkin Cookie Recipe

Ingredients
  • ½ cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ cup maple syrup
  • ¾ cup organic whole spelt flour
  • 1½ cup rolled oats
  • ¼ cup coconut sugar
  • ¼ tsp salt
  • ¼ tsp baking powder
  • ½ tsp baking soda
  • 1½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp ground ginger
  • ½ cup sesame seeds
  • ½ cup dried cranberries (or desired fruit)
Instructions
  1. Pre-heat oven to 350 degree F
  2. Prepare a cookie sheet with parchment paper
  3. Mix dry ingredients together in a large mixing bowl (except cranberries & sesame seeds)
  4. In a medium mixing bowl whisk together the egg, pumpkin, vanilla and maple syrup
  5. Mix wet ingredients in with the dry ingredients
  6. Fold in the cranberries and sesame seeds
  7. Using a spoon scoop out small balls of dough and place onto sheet
  8. Cook for 12 minutes or until lightly browned.
Notes
Remember that cookies continue to cook once out of the oven and left to cool for 10 minutes. Do not over bake!
